Colmar has put in place an Environmental Management System to monitor and reduce the impacts related to its activities and ensure compliance with regulations.
The Environmental Management System is a tool that enables the evaluation of environmental performance and the definition of continuous improvement objectives. The company conducts internal audits with the aim to identify the most critical areas that require immediate intervention and prevents potential negative impacts on the environment. Colmar's Environmental Management System is subject to periodic control and verification procedures.

Carbon Footprint
Among the most significant environmental impacts for Colmar are those related to energy consumption, which is responsible for greenhouse gas (GHG) emissions into the atmosphere.
Since 2023, in addition to monitoring its energy consumption, Colmar has been calculating its Carbon Footprint. The company conducts a detailed analysis of greenhouse gas emissions according to the Greenhouse Gas Protocol guidelines. The approach used is operational control. The reporting area is the same as for the financial statements. The reporting of Scope 1, 2, and 3 emissions enables the identification of key areas for emissions reduction and the evaluation of the effectiveness of actions already undertaken.
Energy Efficiency and Renewable Sources
Colmar is actively committed to reducing its GHG emissions through optimization of consumption and replacement of traditional fossil sources with renewable energy sources. In 2024, the company installed photovoltaic panels (with a total capacity of approximately 19.78 kWp) on the roof of the company restaurant in order to produce energy to heat the sanitary water for one of the kitchens. From 2025, at the headquarters and warehouses in Monza, Colmar uses exclusively electricity from renewable sources and methane gas with compensated emissions.

Colmar promotes responsible waste management. In 2024, the Company undertook a project aimed at improving both the monitoring system, with the adoption of a method for estimating urban waste production, and the differentiation of urban and special waste, to support and increase recycling and reuse.
